The Spicy Pumpkin Muffins

Pumpkin is also packed with carotenoids, which our body converts to Vitamin A that is important for good vision, healthy skin and strong bones.


The spice mix of gingerbread spice, pretty common in Christmas cookies, has elements which protect the body from inflammations and improves your general well-being.


These pumpkin spicy muffins are super quick and really tender on inside. You can store them in a fridge for about 4 days (if you resist them)

Ingredients:


  • 1 + 3/4 cup whole wheal flour

  • 2 tsp baking powder

  • 1 tsp cinnamon

  • 1/2 tsp ground ginger

  • 1 tsp gingerbread spice mix

  • 1/2 tsp salt

  • 6 tbsp coconut oil

  • 1/2 cup honey

  • 1 tsp vanilla extract

  • 2 large eggs

  • 1 + 1/2 cup pumpkin mash


Directions:


  1. Bake or cook your pumpkin to soften, then mash to smooth and set aside.

  2. Mix all the dry ingredients in a medium bowl and set aside.

  3. In a large mixing bowl cream the coconut oil and honey with hand mixer until smooth.

  4. Add eggs one at the time until combined.

  5. Stir in dry ingredients, combine well and add pumpkin mash with vanilla(do not over mix).

  6. Fill in 12 silicon muffin forms and bake on 170 C for 20 minutes.


Let cool and top with some walnuts if desired
