The real deal Pumpkin Salad

Once you smell and taste this salad, you won't dream about pizza or candy!

The combination of sweet, salty, warm and cold, crunchy, and soft....this Pumpkin Salad has got it all.

Butternut squash is low in calories but high in many nutrients, including vitamin A, vitamin C, magnesium, and potassium. Packed With Vitamins and Minerals. Butternut squash is an excellent source of many vitamins and minerals!

Ingredients (2 portions):

1 Butternut Squash

1/4 Pomegranate

150 g Feta Cheese

2 Handfuls Walnuts

1 tbsp Honey

1 tbsp Olive Oil

Salt & Pepper


  1. Clean the pumpkin and cut it into smaller pieces about 2x2 cm.

  2. Place the pieces on a baking tray covered with baking paper, sprinkle with salt, pepper, drizzle with olive oil, and honey.

  3. Place into warmed up oven and grill on 200 Celsius for 20 minutes.

  4. Meanwhile, clean pomegranate and set aside.

  5. Take the pumpkin out of the oven and flip each piece.

  6. Sprinkle with walnuts and return back to the oven for another 20 minutes.

  7. Remove from the oven (check one piece, if soft enough depending on the size) and transfer to a serving dish.

  8. Sprinkle with some additional salt and pepper if desired, then top with feta cheese and pomegranate.
