Cauliflower Veggie Burgers

Who doesn't love to enjoy a good burger? This recipe is a great way how to add some vegetables into your diet and simply transforms your cheat meal into something healthy and nutritious, so you can enjoy it on daily basis.


(For 7 burgers)

  • 400g cauliflower rice (you can simply buy it ready, or chop one cauliflower into tiny pieces)

  • 2 handfuls of baby spinach

  • 1 handful celery leaves

  • 2 small shallots

  • 2 cups shredded oats

  • 3 eggs

  • Spices to taste: Himalayan salt, white pepper, paprika, basil, parsley


  1. Transfer cauliflower rice to a large bowl and add chopped spinach, celery leaves, shallots and shredded oat flakes.

  2. Mix well until all combined, then break in 3 eggs, add spices based on your taste and mix well until all stick nicely together so you can start forming your burgers.

  3. Use about one handful of the mixture for one burger.

  4. Lay on the baking tray covered with baking paper and bake in the oven at 170 C for about 45 minutes (flip over halfway through if required)

TIP: In case too hungry simply heat up some oil on a non-stick pan and grill the burgers about 2 minutes from each side
